Autumn is rapidly approaching, which can only mean one thing – we are all about to be able to satisfy our cravings for pumpkin spice everything! Start the season off right with this delicious pumpkin bread pudding – a creative take on a traditional classic!
Ingredients
- 1 loaf brioche, challah, sourdough, or French bread
- Butter for pan
- ¾ cup packed brown sugar
- 3 large egg yolks
- 2 large eggs
- 1 (15 oz.) can pumpkin puree
- 1 ½ cups milk
- 1 ½ cups heavy cream
- 1 tsp. pure vanilla extract
- 1 tsp. cinnamon
- ½ tsp. Kosher salt
- ¼ tsp. ground nutmeg
- ¼ tsp. ground ginger
- Caramel for serving
Instructions
- The day before, slice bread into 1” cubes and leave out overnight to dry out
- Preheat oven to 350
- Butter a large baking dish
- Whisk together sugar, yolks, and eggs in a large mixing bowl
- Add pumpkin, milk, cream, vanilla, and spices
- Add bread and toss to combine
- Let soak for 10 minutes
- Transfer mixture into prepared baking dish
- Bake 40-45 minutes until custard is set
- Let cool for 20 minutes before slicing
- Serve topped with caramel
