Pumpkin Bread Pudding

Autumn is rapidly approaching, which can only mean one thing – we are all about to be able to satisfy our cravings for pumpkin spice everything! Start the season off right with this delicious pumpkin bread pudding – a creative take on a traditional classic!

Ingredients

  • 1 loaf brioche, challah, sourdough, or French bread
  • Butter for pan
  • ¾ cup packed brown sugar
  • 3 large egg yolks
  • 2 large eggs
  • 1 (15 oz.) can pumpkin puree
  • 1 ½ cups milk
  • 1 ½ cups heavy cream
  • 1 tsp. pure vanilla extract
  • 1 tsp. cinnamon 
  • ½ tsp. Kosher salt
  • ¼ tsp. ground nutmeg
  • ¼ tsp. ground ginger
  • Caramel for serving

 

Instructions

  1. The day before, slice bread into 1” cubes and leave out overnight to dry out
  2. Preheat oven to 350
  3. Butter a large baking dish
  4. Whisk together sugar, yolks, and eggs in a large mixing bowl
  5. Add pumpkin, milk, cream, vanilla, and spices
  6. Add bread and toss to combine
  7. Let soak for 10 minutes
  8. Transfer mixture into prepared baking dish 
  9. Bake 40-45 minutes until custard is set
  10. Let cool for 20 minutes before slicing
  11. Serve topped with caramel
