Shrimp Pizza!

My family and I have always loved going to Red Lobster for special occasions. One time, we decided to try a new appetizer we’d never had before. We picked their ‘Lobster Pizza’ and ended up loving it so much we recreated it at home! In our at-home version, we use shrimp instead of lobster to save money, and we use flour tortillas as the pizza crust. You can use fresh or frozen shrimp, they both work just fine.  

Ingredients

  • 8-10 shrimp, thawed (if applicable). 
  • 2-3 Roma tomatoes
  • 2 flour tortillas
  • 1 Cup shredded mozzarella cheese
  • 1 Cup shredded parmesan cheese
  • 1 Tablespoon Italian seasoning
  • Pinch of salt
  • Pinch of pepper
  • 1 teaspoon of olive oil
  • 1 teaspoon garlic salt

 

Directions

Cut shrimp into 2 to 3 pieces each. This is to ensure they cook faster!

Move your shrimp into a bowl, sprinkling 1 tablespoon Italian seasoning, a pinch of salt, and a pinch of pepper. Stir ingredients together.

Dice Roma tomatoes.

Brush both tortillas with olive oil. Be careful not to use too much, as you don’t want the tortillas to be soggy, you want them to crisp up in the oven.

Sprinkle a pinch of garlic salt on tortillas, and start placing shrimp and tomatoes around on tortillas. 

Once you have used all of the shrimp and tomatoes, sprinkle a ½ Cup of parmesan and mozzarella cheese on each “pizza.”

Bake at 450 degrees for 5 minutes, turning on the broiler for 1-2 minutes to crisp up the tortillas and get the cheese to bubble. 

Let the “pizzas” cool for 2-3 minutes, cut into 4 or more slices and enjoy!
