I don’t know about you but I never want a bland/boring sandwich, so I’m constantly looking for something tasty to ‘jazz’ up an otherwise ordinary meal. That all being said, I studied abroad in Florence, Italy back in 2013, and one of the most profound and special delicacies of Italian cuisine is basil, so may I give you an American spin on an Italian Original: Avocado Pesto.
Not only are avocados rich in monounsaturated fatty acids with help contribute to healthy brain and bodily functioning, but they also provide a rich creamy consistency sure to make your taste buds happy. So mix this bad boy into pasta, sandwiches, and even add some water and use it as a salad dressing!!
Ingredients:
- 1 garlic clove
- 1/4c basil leaves
- 1-2 Tbsp lemon juice
- 1 Tbsp olive oil
- 1 Avocado
- 1 Tbsp water
- ½ tsp sea salt
- Fresh ground pepper (to taste)
Directions:
- In a food processor, combine the garlic and basil and pulse to a minced consistency.
- Add the lemon juice, oil, avocado, and 1 tablespoon water and process until smooth (stopping to scrape down the bowl as needed). If the sauce is too thick, add a bit more oil.
- Season with salt and pepper to taste.
