This is a tried & true Tess original. I am the biggest lover of sweet potatoes. They are my babies. I’ve probably gone the last 10 years of my life barely skipping a day without having them in some way, shape, or form. This is my favorite and most prized perfect recipe.
- 1 medium sweet potato
- Salt & Pepper (to taste)
- Pre-heat oven to 400F.
- Wash/scrub the sweet potato under running water.
- Chop sweet potato into rectangle ‘matchsticks’ approximately 1” in width.
- Lay onto non-stick pan and salt and pepper generously.
- Bake for 30-minutes – flipping halfway through.
