Quick & Easy Banana Bread

Baking Banana Bread Dessert Loaf

Baking has encompassed many of our lives during this quarantine and banana bread is such a staple in my house. Take some over ripened bananas and a couple other ingredients, and you’ve got yourself a quick and easy breakfast or snack!

Quick & Easy Banana Bread (or Muffins!!)


-2-3 ripe bananas (mashed)

-1.75 cups flour

-1 tsp cinnamon

-¾ tsp salt (unless using salted nut butter)

-¾ tsp baking soda

-½ tsp baking powder

-½ cup sugar

-⅓ cup nut butter (peanut, almond, cashew, or even cookie butter)

-1 tsp vanilla extract

  • Optional: ½ c walnuts (chopped) or chocolate chips 


  1. Preheat oven to 350F;
  2. Mix flour, cinnamon, salt, baking soda, and baking powder in a mixing bowl;
  3. Add in bananas, sugar, nut butter, milk, and vanilla;
  4. Fold in walnuts and/or chocolate chips;
  5. Add batter to either a non-stick bread pan or 6-ct muffin pan;
  6. Bake for 50-55 minutes or until golden brown.
