Summer Greek Chickpea Salad

Summer Greek Chickpea Salad

Adapted From Natasha’s Kitchen


3 Tbsp Olive Oil

3 Tbsp Lemon Juice (juice from one lemon)

1 minced garlic clove

½ tsp sea salt

⅛ tsp black pepper

1 cup pearl couscous (cooked)

1.5 cups cherry tomatoes (sliced)

1 cucumber (chopped)

1 can (15-oz) garbanzo beans, drained and rinsed

½ medium red onion (thinly sliced)

1 avocado (cubed)

¼ cup cilantro (chopped)

4-oz feta cheese


  1. Combine oil, lemon juice, garlic, salt, and pepper in a small bowl.
  2. Toss together remaining ingredients with oil dressing mixture, coating well.
