Homemade Egg Breakfast Sandwiches

Ingredients:

1 cup spinach

1 cup diced cherry tomatoes

6 eggs 

¼ cup feta cheese (crumbled)

Pinch salt/pepper

6 english muffins

6 slices of cheese (any variety)

Directions:

  1. Preheat oven to 375F;
  2. Evenly distribute spinach and tomatoes amongst 6 muffin tins;
  3. Whisk together eggs, salt and pepper;
  4. Pour mixture evenly into muffin tins; 
  5. Top with feta cheese;
  6. Bake for 17-20 minutes until the edges are set to golden brown and the center is cooked through;
  7. Toast english muffins and pop out a egg muffin-lay on top and top with cheese;
  8. Enjoy!

**Freeze remainder of Egg Breakfast sandwiches (5) and microwave for 1 minute, if pulling from the freezer.**
